Camping Cuisine: Delicious recipes for cooking outdoors!

During our camping adventures in Northumberland and beyond what we are eating is of high priority!  We have developed a  list of go to dishes, easy to prepare and cook outdoors.

So if you are planning a camping or glamping trip to
Hadrian’s Wall, then read on for some delicious recipe tips!

Campfire Breakfast Burritos

Ingredients: Tortillas, eggs, peppers, onions, sausage/ bacon (or veggie), cheese and salsa. (all available from Billy Bell’s in Haltwhistle who make their own amazing sausages!)

Instructions: Cook scrambled eggs over a campfire, BBQ the vegetables and meat. Fill tortillas with the mixture, add cheese and salsa. Then wrap them in tin foil and put back on the BBQ to melt the cheese or eat your burrito as is for a tasty breakfast on the go! (Maybe the salsa is a bit much for breakfast =divided opinions 😉)

Pan – fried mackerel with crushed new potatoes

This is one of Steve’s favourites at Hadrian’s Wall Campsite and you can buy fresh fish at Billy Bell’s in Haltwhistle!

Ingredients: 500g new potatoes, 2 whole mackerel, some oil, butter, any herbs, 2 chopped spring onions.

Instructions: Boil the potatoes, drain and keep warm in the same pan. Oil in a pan and heat really hot before putting the fish in skin down first then turn. Just fry for a minute or 2. Now crush the potatoes with a fork and add butter and herbs. Now serve with salad or a chunk of bread – yum!

We have nicknamed these ‘foil meals’ 

Ingredients: Diced potatoes, carrots, onions, peppers, seasoned chicken or sausage.

Instructions: Place ingredients on a large piece of tinfoil. Season with salt, pepper, and any other herbs or spices, mix this with a small amount of oil. Fold the foil into a packet and seal tightly. Cook over the campfire until meat is cooked through and vegetables are tender. You can add a little wine or some water to “steam” the dish. If you are glamping in our bell tent or one of our shepherd huts there is a firepit with a grill over which is perfect for this style of cooking – yum!

Campfire Pizzas

Ingredients: Pizza dough, pizza sauce, shredded cheese, and any toppings of choice! (pepperoni, peppers, onions … )

Instructions: Roll out pizza dough and cut into squares. Spread pizza sauce on one half of each square, then add cheese and desired toppings. Fold over the other half of the dough to create ‘pockets’. You can cook on a cast-iron skillet over the campfire until dough is cooked and cheese is melted, or completely wrap your pocket in foil and BBQ.

We had some regular guests staying at the campsite last summer who introduced us to this pizza – a Northumberland camping masterpiece! 😊

BBQ Tacos

Ingredients: Choice of filling (such as cod, chicken or halloumi), taco seasoning, corn tortillas, shredded cabbage or lettuce, diced tomatoes, avocado slices, slices of lime.

Instructions: Season filling with taco seasoning and grill over the campfire until cooked through. Serve in warmed corn tortillas with shredded cabbage or lettuce, diced tomatoes, avocado slices, and a squeeze of lime.

Campfire Grilled Veggie Wraps

Ingredients: Tortillas, grilled vegetables (mushrooms, courgette, peppers, onions, etc.), hummus, feta cheese, spinach leaves.

Instructions: Spread hummus on your tortilla, then add your vegetables cooked on your BBQ or grilled on your campfire, either adds a lovely smokey taste. Crumbled feta cheese along the top and spinach leaves. Roll up the tortillas and grill over the campfire until warm and slightly crispy.

This is definitely one of our Hadrian’s Wall Camping favourites! The red peppers with a slight crunch and the texture of the feta is fantastic!!

And now, how we do love the sweet stuff at Hadrian’s Wall campsite!

Campfire Banana Boats

Ingredients: Bananas, chocolate chips, mini marshmallows, nuts, crushed biscuits.

Instructions: Slice a banana lengthwise (with the peel still on). Stuff the banana with chocolate chips, mini marshmallows, and any other desired toppings. Wrap the banana in foil and cook over the campfire until the chocolate is melted and the banana is soft. The perfect desert for a luxury camping experience! – don’t forget we have marshmallows in our little shop at Hadrian’s Wall Campsite 😊

Sweet Apple slices

Ingredients: Sliced apples, oats, brown sugar, cinnamon, butter.

Instructions: Mix oats, brown sugar, cinnamon, and melted butter in a bowl, dip the slices of apples in the bowl and coat them. Place the coated sliced apples on a BBQ or wrapped in foil over a campfire. Cook until the topping is golden brown.

And so much more! Spending time in nature doesn’t mean sacrificing taste and luxury when it comes to your meals – there is more to a camping trip on Hadrian’s Wall than supermarket sausages and burgers!

A successful camping holiday to Northumberland will require lots of planning, especially in relation to food but please do consider our lovely local businesses in Haltwhistle, Brampton and Hexham where you will find amazing local produce in butchers and fruit and vegetable merchants. There is even a farmers’ market nearby in Greenhead

Don’t forget that if you stay at our small and friendly campsite, we allow firepits and if you don’t have room to pack yours then you can rent one of ours – we also sell firewood at our campsite!
